Birthday time was low key this year. We had a, now traditional, dinner of lasagna, and mint chocolate cake with mint chocolate ice cream for dessert.
Our favorite lasagna to make is a varied version of Mel's Classic Italian Lasagna. I like to use a mixture of ground beef and Italian sausage as the meat and I don't typically make my own sauce, although it is fantastic. The mint chocolate cake is also a varied version of one of Mel's recipes. I used mint chocolate chips in the recipe and put crushed grasshopper cookies and mint whipped cream on top. Delicious.
It was a special dinner for an even more special man that is the center of our universe. Happy Birthday to Brandon!
